"Well we are nearly there on the lease and huge raft of paperwork to make Ceru Sydney a reality. Then all we have to do is rip out the existing restaurant fit out because it is hideous. Then create an amazing new home to share the vibrant Mediterranean street food and flavours of the Levant. All the produce will be organic and free range with a focus on provenance. The fish will be sustainable of course and the wines organic and chemical free. We hope to open the new Ceru in early October [2015]. This funky new space will be a 100 seat restaurant and bar bringing something brand new to Sydney. As soon as the paperwork is signed I will tell you where it is going to be. In the mean time there are these to whet your whistle" says Chef Tom Kline.
