Award winning Australian brewer Endeavour Vintage Beer Co, and seasoned hospitality professionals Applejack Hospitality (Bondi Hardware, The Botanist, SoCal, Della Hyde & The Butler), have opened an exciting collaboration in The Rocks within a building that once housed Sydney’s longest-running colonial hotel dating back to the 1800s.
Inspired by the building’s long history of publican life they have opened Endeavour Tap Rooms, an onsite-brewery, bar and restaurant. It is the first ever location for Endeavour Vintage Beer Co.’s own brewery and follows the brands unique philosophy of using all-Australian, seasonally-harvested ingredients with no preservatives.
The restaurant menu lends itself to the exceptional beers on tap, using the best local ingredients where possible, and from producers that support ethical farming practices. The menu has a focus on a range of smoked produce. The meats are smoked in a Yoder YS1500, and are lighter versions of American barbeque. Using the on-tap beer and ferments also plays a key role in the kitchen.
