From Tulum to Bondi – Sydney’s first Mexican wood-fire restaurant!

From the owners of the much-loved Bondi local, Taqiza, comes Carbòn – an authentic Mexican wood-fire eatery inspired by the haciendas of the Mexican Caribbean.

Carbòn which translates to ‘charcoal’ in Spanish, focuses on wood fired dishes made using traditional Latin American ‘parrilla’ techniques.

This form of cooking has a sustainable and symbolic cycle in Mexican cuisine. It’s used for cooking tortillas, heating underground ovens and boiling soups and sauces. The fire is kept alight, meal after meal, enriching the flavour of the charcoal as more and more layers of specialised wood are added.

The menu at Carbòn utilises these traditional methods to create inventive dishes using fresh produce. Aligning with Latin American cultural values, the menu is designed to be shared with family and friends. A signature special is their ‘Make your own tacos’ (M.Y.O.T), where diners are encouraged to create their own taco flavour combinations, from Hampshire suckling pig with achiote abodo and Seville oranges to roasted lamb shoulder with chipotle citrus yoghurt. In addition to fresh and creative tacos, the menu also boasts vibrant specials like Tuna Tiradito with charcoal sealed tuna sashimi, finger lime, tiger’s milk, sweet potato chips and salmon caviar.

This creativity and Mexican authenticity continues in the bar with cocktails made using premium tequila and mezcal, like ‘Bondi Sunset’ with mezcal, elderflower liquor, lime juice and mandarin or ‘Oaxacan Pink Lady’ with mezcal, brandy, lemon juice, agave syrup and aquafaba.

Owners and chefs, Pablo Galindo Vargas and Liber Osorio say, “At Carbòn, we wanted to rescue the indigenous culinary elements of our backgrounds, going back our roots to create a menu full of flavours, colours and textures while maintaining the integrity and sustainability of the produce.”

Located towards the end of Bondi Rd in South Bondi, in the old Rum Diaries spot, Carbòn is a venue that gives off an effortlessly fun and relaxed vibe, transporting you to the beach haciendas of the Mexican Caribbean. In contrast with the cosy and intimate space of Taqiza, Carbòn is a larger venue with a full kitchen, so it’s able to create and offer more when it comes to food and dining.
