They're advertising for staff now so it won't be long before we break more new ground in Sydney. The pedigree of Sam Miller, from The Number 1 restaurant in the world, Noma is well known and (our facebook sources tell us that) the chefs' applications are going to sam@. But the Noma pedigree doesn't stop there, with our Sydney lad Sommelier James Audas taking the james@ applications for the floor.
Although there's no official news from the Old Clare Hotel at Broadway site, the two early 20th century adjoining properties are undergoing renovation, and are boasting exceptional hospitality to come.
