Bubble & Squeak is a 3 day collaboration (May 10th to 12th) between PS40 and young gun chef, Jake Ryan Dolin from Rockpool Bar & Grill as part of the World Class Cocktail Week.
The event reimagines Britain’s favourite food & drinks. It will feature a custom made fermented crumpet soda and a Hiramasa kingfish cured with gin and PS Bush Tonic.
The cocktail menu revolves around nostalgic Britain and is light and playful. Think Peas & Carrots with vodka, snap peas, carrots, smoked salt and aquavit or
Pimms Revisited with gin, Fernet, cucumber, champagne strawberries and blackstrap ginger. All cocktails have been made to match Dolin’s dishes and transport you to London Fields.
Chef Jake Ryan Dolin was born in England and naturally draws a lot of inspiration from his birth place. Dolin’s food features staple British bar classics from Welsh rarebit to pigs head terrine. The food aims to be simple but focusing on great technique and brilliant produce, whilst implementing elements of PS Soda’s core flavours on to the plates.
