Tradition, heritage and innovation collide as Bistro Moncur gets set to celebrate its landmark Silver Anniversary this March 2018. With renowned chef Damien Pignolet at its helm, the iconic Woollahra institution has pioneered through 25 years, from revolutionising pub dining in Sydney’s 90s to inspiring a new legacy of innovation with Bistro Moncur Group Executive Chef, Ben Varela, and Head Chef, Mark Williamson.

It was March 3rd, 1993 when Pignolet first opened the doors to his classic French bistro, quickly putting Woollahra on the culinary map. Known for delivering authentic, quality dishes and impeccable service – not to mention its paper table cloths and decent napkins – the neighbourhood restaurant quickly became a favourite haunt for eastern suburbs locals, celebrities and business heavyweights who still frequent the eatery to this day.

“There’s nothing more powerful than local, local, local. Our guests were much more than regulars, they were part of the family,” Pignolet says. “Our food was everything. We created dishes that people identified with, and identified pleasure with. No one was doing what we were doing.”

Although the event dinner this Friday is sold out, the good news is that Bistro Moncur will be offering the 25th Anniversary menu throughout the month of March. And to celebrate the milestone, Bistro Moncur have uncovered never before told stories from 1993 to now, which have created an incredible retrospective look at how one of Sydney’s most renowned and respected chefs revolutionised pub dining in Sydney’s 90s.
