Bistro Moncur approaching its 30 year celebration in 2023, has long been a Sydney favourite for a classic, sophisticated, yet relaxed dining experience.

Not resting on its laurels, the news announced by Bistro Moncur this week is that Tom Deadman will be its new Head Chef.

With Deadman introducing a menu that will bring an elevated view on authentic French cuisine to the Eastern Suburbs, Bistro Moncur can expect a fresh take on its bistro menu alongside daily specials showcasing the best of Australia’s seasonal produce.

Tom’s extensive background includes UK Michelin star restaurant Reads in Kent as well as his Australian career in French cuisine working alongside award winning Executive Chef Justin North at Becasse, Quarter Twenty One and local eastern suburbs venue Hotel Centennial.

“What excites me the most about this new experience is the opportunity to run an incredible kitchen which has been a Sydney institution for almost 30 years. I have always held French cuisine close to my heart and with a 9-month trip to France recently, I discovered more traditional dishes and techniques. When creating a menu for Moncur I will honour the legacy of its hero dishes, whilst bringing in new French classics utilising high quality Australian produce” commented Tom Deadman.

Unafraid to try something different that regulars and new diners alike will love, Tom is known for creating memorable dishes that utilise outstanding produce. Familiar with authentic French cuisine, Tom plans to draw inspiration for the new menu from local dishes in his wife’s region of France, along with authentic dishes from coastal towns in the south of France. With an ethos that ‘simple flavours speak loudest on the plate’, Tom prides himself on finding incredible Australian products, cooking them with integrity and honouring them.

“I will be constantly sourcing the best premium produce in Australia. I want to work with suppliers that share similar values and passion for quality produce. My aim is to build authentic, respectful partnerships with reputable brands” Tom commented.

Bistro Moncur is also excited to announce Simon Tebbs as Restaurant Manager. With over 20 years of hospitality experience, Simon has been an owner and operator of successful restaurants and bars in the UK, consulted for a variety of venues and been part of the biggest hospitality groups in Australia.

Having joined the Bistro Moncur team in early April 2016, Simon knows the regulars’ names, their favourite dishes and their preferred wine on the menu. In this new role Simon and his team will continue to deliver consistently impeccable service where locals feel at home. Simon and Tom have also worked together extensively before.

“I am very keen to be stepping into the position of Restaurant Manager at Bistro Moncur as we near our 30 years. Having been with the team since 2016, it’s an exciting change that I am looking forward to leading. I’m also looking forward to working with Tom again. Our ideologies have always been well aligned and I’m excited to create a formidable team with him where we can instil the traditional Bistro Moncur values while building new and interesting ideas” commented Simon Tebbs.
