The way to learn more about wine we've determined, is to drink lots of it.

(As if we needed education as an excuse!)

There are a few more helpful tips, but in essence, trying more wine is one (necessary) way to learn about it. Wine has its own solitary life then lifts and changes when married with food. So, one way to learn about wine is to visit the cellar door. Another way to learn more about wine is to enjoy it over dinner. And, the dinner gets even better when the winemaker is present to not only tell you about his wine but to also let you discover more about organic and biodynamic wine making.

Krinklewood's family owned vineyard wines are certified organic. Every aspect of their Hunter Valley vineyard and farm is managed in a biodynamic, organic, holistic and sustainable way, which is evident in the individuality and superior quality of the wines. We've caught up with Krinklewood winemaker Peter Windrim at the Broke vineyard. Met his (vineyard founders) Mum and Dad, seen his (winemaking) egg and met his happy pigs. Felt the all round happiness of the holistic approach.

This time we caught up with him in Sydney. And the choice for the restaurant, and the wine tasting evening, was at the wonderful Whitewater Restaurant Manly. It was our first visit to this elegant white on white mezzanine split with white banquettes, white chairs, white high tables, white bar stools, wide floor to ceiling windows and water views from every table. Although its reputation preceded it we hadn't quite pictured its total monochrome cool.

Pan seared scallops on a shell with mango puree and almond crust.

It was an evening of awesome. Great wines. Great venue. Marvellous meal. Marvellous company.

The only secret we need to confess is that we actually also had cocktails. How could we resist? When at Whitewater... You won't tell Peter Windrim will you?
