World Whiskey Day Feast: 16 + 23 May

The countdown begins as World Whiskey Day approaches on 20 May. To celebrate its recent refurbishment, the 19th century staple of Waverley The Robin Hood Hotel teams up with critically-acclaimed Buffalo Trace Kentucky Straight Bourbon Whiskey to create the ultimate World Whiskey Day feast with two events on Tuesday 16 and 23 May!

Robin Hood Hotel tells the story of Waverley’s rich cultural history continuing to dominate the Bronte Road strip since the 19th century under the management of generations of the Whitten family since the 1970s. It’s recent $8 million dollar renovation propels the brand forward remodeling the lodging space into a french influenced bistro, upgraded sound and stage and a selection of over 200 wines. It’s collaboration with Buffalo Trace sets the tone of a new Robin Hood Hotel as one of the oldest institutions in Sydney’s east joins forces with the oldest distillery in North America.

The 3 course experience is interweaved with the smoothness and balance of the Buffalo Trace Whiskey collection. It’s signature namesake opens the dining feast alongside a textured share platter of assorted cured meat, dried fruit, nuts and crackers complementing its caramel, vanilla and toffee notes with remnants of spice that come through. An alternative to the Corn/Wheat based elixir for this course is a 6 year old Sazerac with a more pugnant herbal tone coming through its composition of rye.

The main course features the rich and hearty hindquarters of Jack’s Creek Black Angus beef. This Great Diving Range producer’s meat is a cross with Tajima Wagyu Sires having pioneered the distribution of Wagyu locally. Accompanying the gamey nuttiness of the cut is the peppercorn sauce which incorporates Buffalo Trace into its mixture exciting the palette into savoury pleasure. Paired with the wheated smoothness and gentle sweetness of Weller Special Reserve, its butterscotch and oak mellowness play well to the sweet hints of the rump sauce and protein.

The rump becomes a permanent staple for punters available weekly on Tuesdays even after the planned Whiskey Day Events on 16 and 23 of May.

Buffalo Trace is also infused into the salted caramel layer of the Banoffee pie dessert. Paired with Eagle Rare 10 year old bourbon, the long and warm finish of honey and toffee heightens the velvety caramel rounded out by the vanilla cream and banana of the pie.
