Toast Pambula is a popular cafe and food store on the main street of Pambula. The central table creates intimacy with low hanging bamboo lamp shades encouraging local women to share confidences over lunch. From a chalkboard special, the strawberry sunrise ($10) delivers a glass of frosty pink happiness crowned with whipped cream and a glacé cherry. Threatening to topple over, the buttermilk fried chicken burger ($20) with a cheeky slice of cheese ($1) sandwiches a plump, crisp skinned chicken fillet with salad fixings inside a milk bun. It’s good but very drippy so don’t be planning on putting it down mid-feed. 

From the boutique selection of goods lining the food store I picked up Sir Racha’s truffled hot sauce ($9). Free from preservatives, this fermented hot sauce made on chillies grown on the Northern Coast of New South Wales is produced in Port Macquarie. With garlic, onions and tomatoes for body, it’s hella tasty on both sausages or scrambled eggs.
