How do you pick just five of the top things to do at this weekend’s Smooth Festival of Chocolate? I mean, with more than 70 exhibitors it’s almost impossible to whittle it down. For a start, there are about 15 items I already know I want to eat – and that’s even before I’ve arrived! Alright, here goes…

1. Smooth aren’t the only ones putting on a mighty fine show this weekend - Sydney is giving us her best with two perfect sunny spring days, and if it’s anything like last year you will need some respite from the heat. Check out Paper Street Ice Cream or everyone’s favourite, Gelato Messina, or if you’re not after something creamy, chill out in the Bilpin Cider Garden Bar with a cold one.

2. From shoes to bags to iPhone cases, it is all about personalisation these days. Lindt is going an extra step further and letting you customise your own Excellence block. Head to the Lindt Lounge to get your fix and test out some of their new éclair flavours while you’re there.

3. Go gluten-free. Ok, maybe not for good, and not just because it’s ‘on trend’ but because gluten-free donut makers, Nutie, are producing some of the best organic and GF donuts around. Baked rather than fried, and topped with some of the prettiest and most intriguing combos, these little treats will melt in your mouth and leave you hanging for more.

4. Learn a thing or two from pastry chefs like Anna Polyviou and Christopher The who will be holding classes in the Callebaut Test Kitchen on Saturday and Sunday. Have a look at the SmoothFM Festival of Chocolate website for session times and be sure to get there early as seats fill up fast!

5. Push the crazy dessert milkshake aside and make room for KayterCon’s creations. Take some cronut sticks, add your favourite toppings and leave with something you would have dreamed of having as a kid. Let your imagination run wild!
