There's a faded vintage Shelleys soft drinks ad painted on the wall outside the café, and magnetic letters on the milkshake menu inside. They sum up the essence of Euforia well. Groovy and modern, future forward yet reflective of the past. Open seven days for breakfast and lunch but only until 2pm, with Darling Street seating providing views of the Sydney Harbour Bridge, we truly are envious of East Balmain locals.

There's three pages of menu choices. All-Day Meals from omelettes to premium thick natural yoghurt, eggs benedict and berry bircher muesli, slow cooked porridge and brioche French toast snack are just a peek into the breakfast options.

Add smashed avocado and Roma tomatoes or garlic infused baby spinach and mushrooms, each served with one poached egg. So here comes the start of my praise. One egg is enough for me, and quite often I don't get that option. Each of these dishes also come on grilled Brasserie Bread sourdough.

There's plenty of options for two egg breakfasts too, rolled in quinoa, American bacon breakfast, Spanish chorizo breakfast, smoked Atlantic salmon stack or vegetarian. There are also immeasurable options given you can add any or all of these - American bacon, Spanish chorizo, smoked salmon, meatballs, grilled haloumi cheese, grilled chicken tenderloin, avocado, sautéed mushroom, char-grilled eggplants, grilled Roma tomatoes, wilted baby spinach, any style egg, chunky tomato relish, house-made hollandaise.

And there are plenty of other options past breakfast with more than twenty choices for Pressed Grills and more than half a dozen salads. From the range of four toast suggestions we tip our Akubra to the smashed avocado and vegemite.

Our must try tips are B.L.A.T. ($10) crispy American bacon, mixed leaf salad, smashed avocado, Roma tomato, seeded whole egg mayo - and a salted caramel gelato milkshake ($6). Euforia even gives you options on the milkshakes. Add a buck and have your milkshake thicker or with milo.

Kevin is doing it right. I was lost and finding the café was an accident. As I stuck my head in I got an immediate smiling "how are you today?" and my day only got better...
