Chef Pablo Tordesillas return to Sydney at the helm of The Resident, a sophisticated new Mediterranean-influenced venue perfectly positioned on College Street by Hyde Park.
The Resident offers a stimulating yet relaxed atmosphere for diners, with a focus on welcoming service and an original creative aesthetic.
During the day the café serves house-made organic bread, pastries and a fresh, seasonal lunch menu.
By night, the restaurant will serve an elegant menu of generous Mediterranean-inspired dishes. The restaurant menu showcases both distinctive Mediterranean flavours and premium quality Australian ingredients sourced from around the country. Dishes will include mussels, lemon myrtle, artichoke & dill, and grilled tongue, quince, anchovy & endive; along with Western Australian octopus, ajo blanco, sumac & grapes and Cooroong Angus skirt with parsley salad from the charcoal grill. Desserts include a spaghetti pumpkin milhojas with crema and pepitas and a goat’s milk yoghurt, orange and rosemary brick.
Sommelier Annette Lacey has curated an extensive list of European and Australian wines to complement the innovative menu.
