Born out of a shared appreciation for everything Italian that ferment, Darlinghurst has a newcomer to the block - Fermento, brainchild of Diego Mazza and Giorgio Colosimo, respectively hailing from Calabria and Milan in Italy.

After a wealth of chef experience with a number of Sydney hotspots such as Merivale’s Ivy and the Northern Beaches’ Manly Greenhouse, Diego was ready to combine forces with his friend Giorgio to open their very first eatery. With their minds in a state of ferment, they wanted to create a place which represented what they love.

This authentic Italian new haunt launches with a delectable menu including dishes such as ham & truffle pizza with fior di latte mozzarella, smoked leg of ham, mushrooms and tartufata $26, home-made prawn ravioli with lemon butter sauce, thyme and roasted pine nuts $28, preceeded by the hero antipasto dish; eggplant parmy rolls with buffalo mozzarella, Napoli sauce, parmigiano, basil sauce and balsamic reduction $21.

All of the pizza dough is made in house through the fermentation process enhancing the structure and flavour of the dough, enjoyed with expertly selected wines from Il Mercante and 12 Bottles or a classic Negroni.

With a ferment of food and wine, diners can enjoy the simple but flavourful venue style, with live music on a Monday and Thursday evening to give your experience a unique and warm ambiente!
