Sydney is dishing up some of the most fabulous culinary adventures via new flavour combo collabs.

And the new LODE Pies & Pastries x Thermomix® and TheMix Shop collab - the tiramisu canelé - is absolutely no exception! In fact, these dessert pastries are probs one of our most favourite collabs so far.

Crunchy and gooey, with a crispy caramelised crust and fluffy custardy middle, canelés are a traditional French pastry dating back to the 15th century, that are becoming increasingly popular in Sydney. Canelés are classically baked in fluted copper tins, which give the canelé pastry its signature shape, and its name from the French word for “fluted.” Canelés are notoriously difficult to make so who else would we want to make them for us but our favourite cult baker LODE.

So, now thanks to LODE Pies & Pastries, canelés can be enjoyed with an Italian twist - with Tiramisù!

The Tiramisù originates closer on our timeline possibly to the mid 20th century. Although, according to Accademia del Tiramisù, historical records state that Tiramisù originated in Treviso in 1800. It is said that this dessert was invented by a clever “maitresse” of a house of pleasure. Who knows? Fact or fiction?

Anyway, the delicious LODE Tiramisu canelé is flavoured with marsala and vanilla, filled with a chocolate and coffee ganache, topped with mascarpone cream and dusted with cocoa powder.

These special contemporary tiramisu canelés pay homage to two far apart centuries, plus adding the nostalgic flavours of chef and co-owner Lorenzo Librino’s childhood growing up in Turin, Italy and are available from Monday 25 September until Sunday 1 October exclusively at the LODE Surry Hills store.

LODE Pies & Pastries limited-edition tiramisu canelés are available from 25 September – 1 October for $4.50 each or $16 for four.
