25 Martin Place: NEW Botswana Butchery

Botswana Butchery will open in the exciting new 25 Martin Place precinct next week. The new dining venue comes to Sydney from leading New Zealand hospitality business Good Group. With relaxed fun dining in a premium atmosphere, Botswana Butchery will be bringing a taste of Australia and New Zealand’s best meat, seafood, wine and produce to the table.

Sydney Scoop caught up with Head Chef Darren Templeman for a cheeky heads up on this new prime position Sydney CBD restaurant.

"Botswana Butchery offers me an opportunity to use all my producer relationships that I have built up over the 20 years I have been in Australia. Championing the small independent grower and farmer along with the larger scale producers that make the Australian food scene so delicious" Templeman advised before explaining each floor of the new venue.

"The Botswana Butchery menu will take guests on an exciting journey as soon as they enter the first level, with our raw and cured bar. Offering high quality local seafood alongside home-made and artisanal charcuterie, it will also be located next to our dry aging cabinets used for select cuts of high-quality beef."

"The second floor will offer a luxurious setting to enjoy the indulgence of what our wood fire grill has to offer, from the finest hand selected cuts we have chosen to lobsters, marron and whole fish."

“The rooftop bar will offer the chance to pop in for a quick bite and a cheeky glass or the option to sit back and enjoy our Siberian Caviar service or a tempura lobster roll!"

Botswana Butchery will have a capacity of 940 guests, including a rooftop space for 350 people. They'll need a lot of chefs!

“Botswana Butchery has built an exciting team of 30 chefs, ranging from talented sous to chef de partie, who will have the support of commis and apprentices who are eager to learn and the connection to the growers, farmers and producers, which hasn’t been more important than it is now. So very exciting times ahead!" Head Chef Darren Templeman added.

This Christmas Day guests can enjoy time together with family while eating amazing dishes from a four course set menu. Bookings are available between midday and 5pm and everyone is welcome. The food menu is priced at $200 for adults and includes a wide selection of dishes, including Butcher’s Block options with sauces. Sides and salad choices will be served to share. The restaurant’s extensive wine list will ensure that everyone can celebrate with their favourite drop.

For New Year’s Eve guests can celebrate in style and choose from a specially crafted à la carte menu that will feature favourites from the Botswana Butchery menus combined with some new and exciting dishes from the Sydney culinary team. Botswana Butchery is open from midday until midnight.

For both Christmas Day and New Year’s Eve, guests will have the opportunity to pre-purchase champagne on arrival to get their celebrations off to a sparkling start. They can choose between a bottle of GH Mumm Grand Cordon for $130 or a bottle of Perrier-Jouët Blanc de Blancs for $280.

Or bring in New Year's Eve at Sydney's newest rooftop, with a premium food and beverage package, and a live DJ until 1am.
