The Indonesian Smashed Fried Chicken here provides well-marinaded chicken with the flavours of coconut milk, turmeric, lemongrass, and other ingredients running throughout the meat. At the first bite, the dredge is crispy. As a result of the Indonesian Fried Chicken being smashed with a mortar and pestle, it creates texture throughout the rice bowl when you take a spoonful of your particular order.

Sambal Matah has become one of my favourite Sambals to have in any Indonesian meal. It is a Balinese raw Sambal brimming with diced chillies that has seeds and all along with raw garlic, lemongrass, kaffir lime leaves and shallots which are roughly smashed in a mortar and pestle with a neutral flavoured oil.
